Ingredients & kitchen items needed Makes around 35 tamales
*Please double the ingredients below if you would like to make double the tamales!*
You can FREEZE tamales and take them out for Christmas Day or even enjoy 2-3 months after!
INGREDIENTS
- 45-50 corn husks
*(We need a few more then 35 husks as we will use some for lining out pot* and sometimes some of the corn husks can have holes or not be good to use! Better to get a few extras! )
*Corn husks can be found at some standard grocery stores, or if you don’t have a Mexican market near... you look out for the following brands; CLICK HERE)
The Masa
- 2 lb (about 7 cups) of Maseca Instant Corn Masa Flour (like this one CLICK HERE)
- 4 tbsp oil (like veg oil, canola or avocado oil)
- 1 1/2 cup vegetable shortening
- 6 cups vegetable broth
- 1 1/2 tsp baking powder
- 2 tsp salt
The Salsas
- 14 Guajillo chiles (what they look like: CLICK HERE)
- 12 tomatillos (what they look like: CLICK HERE)
- 2 white onions
- 4 serrano peppers or 4 jalapeños
- 1 bunch cilantro
- 1 garlic head
The Fillings
- 1 pound Yukon gold potatoes
- 2 cups dried hibiscus flowers (here is an example of what to look for: CLICK HERE)
- 3 poblano peppers
- 2 cans of jackfruit (Make sure to get jackfruit in water or brine, like these two options: CLICK HERE & CLICK HERE)
- 1 yellow onion
- 4 cloves garlic
- 14 ounces of sliced or shredded vegan cheese (I like the following brands; Chao, follow your heart, violife and trader joes vegan shreds)
- 2 cups fresh corn (thawed frozen corn works too)
- 2 tbsp vegan butter
- 1 tbsp cane sugar
Toppings
(Optional but super tasty to top your tamales off with crema)
- Your favorite store bought (vegan) sour cream OR prepare this vegan crema before class
Vegan crema recipe
- 1 cup raw cashews (soak over night in water or in hot water for 20 minutes)
- 1/2 cup filtered water
- 2 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Juice of 1/2 a lemon
Method
In a blender combine all the ingredients and blend until smooth. Add a splash more water if needed to reach desired consistency
EQUIPEMNT
- Cutting board
- Sharp large knife
- Large deep pot with lid
- Steamer that fits in the bottom of pot (an adjustable steamer is your best bet : CLICK HERE)
- Large bowl
- Whisk
- Spoon
- Blender & or food processor
- Large pan
- Spatula
- Stand mixer or hand mixer, no worries if you don’t have either; I will be be showing how to doIt my hand as well!
