This Crispy Tofu with Creamy CA Avocado Vinaigrette is so versatile! It can be added into tacos, in a leafy green salad or even a pasta salad!

INGREDIENTS

  • 1 avocado
  • Juice of 1 lime⁣⁣
  • 1/2 a serrano pepper⁣⁣ 2 cloves garlic, minced ⁣⁣
  • 1/2 onion ⁣⁣
  • 1 tsp salt⁣⁣
  • 1/2 tsp ground pepper⁣⁣
  • 1/2 bunch fresh cilantro⁣⁣
  • 3 tbsp olive oil⁣⁣
  • 1 1/2 tbsp white vinegar⁣⁣
  • 1/4 – 1/2 cup water⁣⁣

EQUIPMENT

  • Medium sized pan
  • Blender or food processor

  1. Begin by adding 1 tbsp olive oil to a pan. Slice up 1/2 an onion then add to the pan and sauté for 5 minuets until onions begin to turn golden. Then add in minced garlic and cook for 2 minutes.
  2. Add onions and garlic to a blender along with the remaining ingredients. Add an extra 1/4 cup of water if needed. Taste and adjust seasonings as needed!
