- 3 dried guajillo chilies (Please check your local Mexican grocery stores or ethnic isles at Kroger stores or order here)
- 1/2 cup ground coffee
- 1 Piloncillo (This is the authentic ingredients to use, please check your local Mexican grocery stores or ethnic isles at Kroger stores or order online) OR 1/2 cup brown sugar
- 4 whole cloves
- 1 cinnamon stick
- 7 ounces vegan cheese (violife feta or trader joes feta is what we recommend)
- 10 corn tortillas
- 8 ounces oil for frying
- 1 cup (raw & unsalted) cashews
- 1 tsp garlic powder
- Salt
- Pepper
- 2 (15 ounce) cans of pinto or black beans
- 1/2 cup vegetable broth
- 1 cup white wine vinegar or apple cider vinegar
- 1/4 cup sugar
